Keto Italian Meatballs Dish
Yummy Italian meatballs that are keto friendly. Net carbs 2.2 per meatball, including sauce! If you omit the sauce, you save yourself a lot of carbs, but to us, Italian is all about the red sauce!

INGREDIENTS

INSTRUCTIONS
  1. Combine beef, sausage, psyllium husk powder, egg, and first group of seasonings (0.5 tsp salt, 1.5 tsp garlic powder, 1 tsp basil, 1 tsp oregano, 1 tsp rosemary, 1 tsp onion powder, 0.5 tsp ground black pepper).
  2. Mix together thoroughly.
  3. Form into desired size meatballs. Makes 18 medium size meatballs, approximately 1-2" in diameter.
  4. Bake in greased or non-stick baking dish at 375F for 20 minutes.
  5. While meatballs are baking, mix all remaining ingredients except mozzarella in a sauce pan for Italian sauce.
  6. Bring sauce to a low boil and allow to simmer/low-boil until meatballs have cooked. The longer it simmers the better the flavor.
  7. When meatballs have cooked 20 minutes, remove from oven.
  8. Top each meatball with 1-2 tsp of prepared sauce.
  9. Top each meatball with a bit of mozzarella cheese.
  10. Return to oven to bake for additional 5-10 minutes.
  11. Broil for 30 seconds-1 minute at the end to allow the cheese to brown slightly.
  12. Remove from oven and allow to cool slightly before serving. The inside of the meatball will be hot!
