Chocolate Mock Oatmeal No Bake Cookies


1/2 Cup Kerry Gold Butter
1 1/2 Cup of Pyure Sweetener or similar
1/2 Cup of Almond or Coconut Milk
4 Tablespoons of Cocoa
1/2 Cup of Natural Peanut Butter
2 cups of Soaked Walnuts (Drained) and Pulsed in food processor until crumbly 
2 Tsp of Vanilla
1 scoop of Vanilla Whey Jay Robb Protein Powder
3 Tablespoons of PB 2 (Powder Peanut Butter)
3 Tablespoons of Blanched Almond Flour

Soak Walnuts for about  2 to 4 hours drain water and rinse well.  Put in a food processor and chop until crumbly.

Mix first 4 ingredients in a saucepan. Bring to a rolling boil, and boil for 1 minute stir constantly.  Take off heat and add rest of the ingredients until nice and thick. If not thick like cookie dough you can add another tablespoon of PB 2 until you get a thick consistency. You Can drop onto Parchment paper 1 tablespoon size.  Put into refrigerator until firm.
